Moist Chocolate Cake
This is the ONLY chocolate cake recipe I ever use. The semi sweet icing is what really makes the cake unique. This recipe came from my very first cookbook, that my dad bought me, when I first got married. I hope you and your loved ones enjoy this cake as much as my family has! (This cake pictured above is 1/2 of the following recipe.)
Moist Chocolate Cake
In a bowl mix:
2 cups sugar
3/4 cup cocoa
3 cups flour
2 tsp. soda
1 tsp. salt
Add:
2 tsp. vinegar
2 tsp. vanilla
2 cups water
1 cup cooking oil
Mix well, and bake at 350 for 30-40 minutes until toothpick comes out clean. Be careful not to overbake.
Semi Sweet Icing
2 cups powdered sugar
1/4 tsp. salt
1 cup cocoa
1/3 cup butter
1/3 cup boiling water
1 tsp. vanilla
Combine dry ingredients. Add butter to the boiling water, when butter is melted, blend with the dry mixture. Add vanilla, then stir vigorously until smooth. Ice the cooled cake.
